Instructions

  1. Make the carrot cake dough: In a large bowl, combine the finely grated carrots, almond flour, coconut flour, chopped walnuts, shredded coconut, maple syrup, cinnamon, nutmeg, ground ginger, salt, and vanilla extract. Mix everything together thoroughly until a thick dough forms. If the mixture is too dry, add a splash of milk to help bind it; if too wet, add a bit more almond flour until it reaches a workable consistency.
  2. Prepare the cheesecake filling: In a separate bowl, whisk together the softened cream cheese, Greek yogurt, maple syrup, and vanilla extract until the mixture is smooth and creamy with no lumps.
  3. Assemble the bites: Scoop about a tablespoon of the carrot cake mixture and flatten it in the palm of your hand. Place a small dollop of cheesecake filling in the center. Carefully fold the edges of the carrot mixture over the filling and roll gently into a ball, sealing in the cheesecake inside.
