Ingredients
Scale
Carrot Cake Mixture
- 1 cup finely grated carrots
- 1/2 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup chopped walnuts
- 1/4 cup shredded unsweetened coconut
- 1/4 cup maple syrup or sugar-free syrup
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon ground ginger
- Pinch of salt
- 1/2 teaspoon vanilla extract
Cheesecake Filling
- 4 ounces cream cheese, softened
- 2 tablespoons Greek yogurt
- 1 tablespoon maple syrup or sweetener
- 1/2 teaspoon vanilla extract
Instructions
- Make the carrot cake dough: In a large bowl, combine the finely grated carrots, almond flour, coconut flour, chopped walnuts, shredded coconut, maple syrup, cinnamon, nutmeg, ground ginger, salt, and vanilla extract. Mix everything together thoroughly until a thick dough forms. If the mixture is too dry, add a splash of milk to help bind it; if too wet, add a bit more almond flour until it reaches a workable consistency.
- Prepare the cheesecake filling: In a separate bowl, whisk together the softened cream cheese, Greek yogurt, maple syrup, and vanilla extract until the mixture is smooth and creamy with no lumps.
- Assemble the bites: Scoop about a tablespoon of the carrot cake mixture and flatten it in the palm of your hand. Place a small dollop of cheesecake filling in the center. Carefully fold the edges of the carrot mixture over the filling and roll gently into a ball, sealing in the cheesecake inside. Repeat this process with the remaining dough and filling until all bites are formed.
- Chill and serve: Place the assembled bites on a plate or tray and chill in the refrigerator for at least 30 minutes to firm up. Serve chilled for the best texture and flavor.
Notes
- These bites are no-bake and can be stored in the refrigerator for up to 5 days.
- For longer storage, freeze the bites and thaw before serving.

- If a sweeter bite is preferred, adjust maple syrup quantity accordingly.
