Description

Delicious and easy-to-make Breakfast Rolls featuring flaky crescent roll dough filled with fluffy scrambled eggs, savory sausage or bacon, and melted cheese. Perfect for a hearty morning meal or meal prep, these rolls are baked to golden perfection and customizable with your favorite add-ins.

Ingredients

Scale

Dough

  • 1 can (16 oz) refrigerated crescent roll dough or puff pastry

Filling

  • 6 large eggs
  • 1/4 cup milk
  • 1 cup cooked breakfast sausage or crumbled bacon
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped green onions or chives
  • Salt and pepper to taste

Optional

  • 1 tablespoon butter (for brushing)

Instructions

  1. Prepare the oven and baking sheet: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. Make the scrambled eggs: In a bowl, whisk together the eggs, milk, salt, and pepper until well combined. Pour the mixture into a nonstick skillet over medium heat. Cook gently, stirring occasionally, until just set but still moist. Remove from heat and allow the eggs to cool slightly.
  3. Prepare the dough: Unroll the crescent roll dough onto a clean surface and separate it into rectangles. Pinch the seams together to seal and create a solid base for the filling.
  4. Assemble the rolls: Spoon an even amount of scrambled eggs, cooked sausage or bacon, shredded cheddar and mozzarella cheese, and chopped green onions onto each dough rectangle. Roll each up tightly like a cinnamon roll, folding in the sides slightly to keep the filling contained.
  5. Arrange and brush: Place each roll seam-side down on the prepared baking sheet. If desired, brush the tops with melted butter to enhance browning and flavor.
  6. Bake: Bake the rolls in the preheated oven for 12 to 15 minutes or until they are golden brown and the dough is cooked through.
  7. Cool and serve: Let the breakfast rolls cool slightly before serving to allow flavors to settle and prevent burning your mouth.

Notes

  • Customize the filling by adding diced bell peppers, spinach, or a dash of hot sauce for a spicy kick.
  • These breakfast rolls are perfect for meal prepping—store leftovers in the refrigerator and reheat in a toaster oven or microwave.
  • Use puff pastry dough instead of crescent roll dough for a flakier texture.
  • To make it vegetarian, omit sausage or bacon and add extra vegetables or plant-based sausage.
