  • 4 small corn tostadas or tortilla chips
  • 6 large eggs
  • ½ cup milk
  • ½ lb breakfast sausage or bacon (cooked and crumbled)
  • 1 cup shredded cheddar cheese
  • 1 cup frozen hash browns (cooked and crispy)
  • ½ cup salsa or diced tomatoes
  • salt and pepper to taste
  • 2 tablespoons butter or oil for cooking


Instructions

  1. Prepare the scrambled eggs: In a medium bowl, whisk together the eggs, milk, salt, and pepper. Heat a nonstick skillet over medium heat and scramble the eggs until fully cooked but still moist. Remove from heat and set aside.
  2. Assemble the crunchwrap: Lay one flour tortilla flat on a surface. In the center, layer the scrambled eggs, cooked sausage or bacon, crispy hash browns, shredded cheddar cheese, and salsa or diced tomatoes. Top this with a small corn tostada or a few tortilla chips for crunch.
  3. Fold the tortilla: Fold the edges of the flour tortilla up and over the filling, working around in a circle to completely enclose the ingredients and create a sealed wrap.
  4. Cook the crunchwrap: Heat the butter or oil in a skillet over medium heat. Place the crunchwrap seam-side down in the skillet. Cook for 2 to 3 minutes on each side or until the tortilla is golden brown and crisp. Repeat the process for the remaining tortillas and fillings.
