Perfect for breakfast, brunch, or dessert, these rolls bring together the comforting flavors of classic cheesecake and sweet strawberries in a delicious homemade roll.

Ingredients

Scale

For the dough:

  • ¾ cup warm milk (about 110°F)
  • 2 ¼ teaspoons active dry yeast (1 packet)
  • ¼ cup granulated sugar
  • ¼ cup unsalted butter, melted
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 ¾ cups all-purpose flour
  • ½ teaspoon salt

For the filling:

  • ½ cup cream cheese, softened
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup diced fresh strawberries
  • 1 tablespoon cornstarch

For the cream cheese glaze:

  • 4 oz cream cheese, softened
  • 1 cup powdered sugar
  • 2–3 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions

  1. Make the dough: In a large mixing bowl, whisk together the warm milk and active dry yeast. Let it sit for 5 to 10 minutes until the yeast becomes foamy. Add the granulated sugar, melted butter, egg, vanilla extract, all-purpose flour, and salt. Mix until a soft dough forms. Knead the dough on a floured surface for 5 to 7 minutes, or use a stand mixer fitted with a dough hook for 4 to 5 minutes, until the dough is smooth and elastic. Place the dough in a greased bowl, cover, and let it rise in a warm place for 1 to 1.5 hours, or until doubled in size.
  2. Make the filling: In a small bowl, combine the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. In another bowl, toss the diced fresh strawberries with cornstarch to coat them evenly. This will help prevent the strawberries from releasing too much juice during baking.
  3. Assemble the rolls: Once the dough has risen, punch it down to release the air. Roll the dough out on a floured surface into a 10 by 14-inch rectangle. Spread the cream cheese filling evenly over the dough, then scatter the coated strawberries on top. Carefully roll the dough tightly from the long edge into a log shape. Cut the log into 9 equal-sized rolls. Arrange the rolls in a greased 9 by 9-inch baking dish. Cover the dish and let the rolls rise again for 30 to 45 minutes.
  4. Bake: Preheat the oven to 350°F (175°C). Bake the rolls for 25 to 30 minutes or until the tops are golden brown and the rolls are cooked through. Remove the baking dish from the oven and allow the rolls to cool slightly.
  5. Make the glaze: Whisk together the softened cream cheese, powdered sugar, milk, and vanilla extract until smooth. Drizzle the glaze over the warm rolls just before serving for a creamy, sweet finish.

Notes

  • For an extra fruity touch, add a tablespoon of strawberry jam to the cream cheese filling before spreading it on the dough.
  • You can prepare the rolls the night before by assembling them and refrigerating the dish. In the morning, bring the rolls to room temperature before allowing them to rise and then bake.
