Description

Baked Feta Potatoes are a delicious and easy side dish featuring tender, golden roasted potatoes seasoned with oregano and garlic, topped with creamy melted feta cheese and fresh parsley for a burst of flavor.

Ingredients

Scale

Potatoes and Seasoning

  • 4 medium potatoes, peeled and cubed
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • Salt and pepper, to taste

Topping

  • 1/2 cup feta cheese, crumbled
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat Oven: Preheat the oven to 400°F (200°C) to ensure it reaches the proper temperature before baking the potatoes.
  2. Prepare Potatoes: In a large bowl, toss the cubed potatoes with olive oil, dried oregano, garlic powder, salt, and pepper until evenly coated. Spread the seasoned potatoes in a single layer on a baking sheet.
  3. Bake Potatoes: Place the baking sheet in the oven and bake for 25-30 minutes until the potatoes are golden brown and tender when pierced with a fork.
  4. Add Feta Cheese: Remove the baking sheet from the oven and sprinkle the crumbled feta cheese evenly over the hot potatoes. Return to the oven and bake for an additional 5-7 minutes until the feta softens and slightly melts.
  5. Garnish and Serve: Remove from the oven, garnish with freshly chopped parsley, and serve immediately while warm.

Notes

  • For extra crispiness, use a baking sheet lined with parchment paper or a silicone mat.
  • You can substitute dried oregano with fresh oregano or thyme for a different flavor profile.
  • This dish can be served as a side for grilled meats or as a vegetarian main with a salad.
  • To keep the feta firmer, add it in the last 5 minutes of baking as instructed.
  • Leftovers can be refrigerated and reheated in an oven or air fryer to maintain crispness.
