Instructions
- Preheat Oven: Preheat the oven to 400°F (200°C) to ensure it reaches the proper temperature before baking the potatoes.
- Prepare Potatoes: In a large bowl, toss the cubed potatoes with olive oil, dried oregano, garlic powder, salt, and pepper until evenly coated. Spread the seasoned potatoes in a single layer on a baking sheet.
- Bake Potatoes: Place the baking sheet in the oven and bake for 25-30 minutes until the potatoes are golden brown and tender when pierced with a fork.
- Add Feta Cheese: Remove the baking sheet from the oven and sprinkle the crumbled feta cheese evenly over the hot potatoes. Return to the oven and bake for an additional 5-7 minutes until the feta softens and slightly melts.
- Garnish and Serve: Remove from the oven, garnish with freshly chopped parsley, and serve immediately while warm.
